Ingredients;
4 pieces karele
4 pieces medium-large onion finely chopped
4-6 green chilies
1 tsp salt
1 tsp red chili power
1/2 tsp coriander powder
1/4 tsp turmeric
3-4 tbsp oil
For Stuffing
5-6 large-medium onion crushed
1/2 tsp salt
1/2 tsp red chili powder
12 tsp crushed red chili
1/2 tsp coriander powder
Procedure;
- Peel the karele and cut into half
- Remove the seeds with the help of spoon
- Remove the skin from seeds
- Add salt to all karele and skin and let it for 30 minutes
- After 30 minutes wash them an soak them in salt water for 15-20 minutes
- After that soak them in col water for 30 minutes
- Meanwhile crush the onion and squeeze them well
- Add all spices to the onion and mix them
- In non stick pan add 1tbsp of oil an saute the onion for few minutes
- Let them cool before stuffing
- Now fill the karele with this mixture
- In a wok pan heat oil and fry them from all sides
- Cover the wok while frying so the karele will get tender with steam
- Remove them from oil and place aside
- Now chop the remaining onion and mix the spices and the skin to the chopped onion
- In pan add 3-4 tbsp oil and fry the onion an cover them
- After 2- 3 minute add the fried karele and cover the pot
- Cook them on slowest heat for few minutes
- Serve them with chapati
